SEPTEMBER 2013 Recipe of the Month

Title: Chicken Quesadillas

Member: [CK] 5willards

Ingredients:

1 pound boneless skinless chicken breasts
1 packet taco seasoning
8 tortillas
1 Vidalia onion, diced
2 green bell peppers, diced
2 tbsp oil or cooking spray (if using camp stove - for cooking chicken and
vegetables/toasting tortillas)
Salt and pepper, to taste
2 cups shredded Mexican cheese
Toppings as desired (we prefer sour cream and salsa)

Directions:

Cook chicken over grill or on camp stove until done.  Add taco seasoning as per
the packet's directions.  Remove from heat and let rest.  Meanwhile, season
vegetables with salt and pepper to taste and cook until slightly tender.  Shred/
dice chicken into small pieces, then combine with vegetables.  Spoon mixture
onto bottom of tortilla until completely covered.  Sprinkle cheese on top, then
place tortilla on top to cover.  Cook/grill on both sides until quesadillas are
toasted and cheese has melted.  Slice into eight triangles and serve with choice
of toppings.

Serves: 4

Resurrecting, again, an old thread but I have to say (coming from Texas) these are some darn good quesadillas!  Thank you!
