AUGUST 2013 Recipe of the Month

Title: Meatball wrapped in garlic bread with cheese.

    Member: [CK] DAMN YANKEE

    Ingredients:

1 can Pillsbury golden layers biscuits - each pulled into 2 layers.
10 frozen fully cooked italian style meatballs - thawed
2 sticks string cheese - cut each into 10 pieces.
    1 tbs. Parmesan cheese
    1/2 tsp Italian seasoning
    1/4 tsp Garlic powder
    1 cup Marinara sauce

    Directions:

Prepare a 12-inch Dutch oven for baking at 350 degrees. Place a round metal rack in the bottom and allow the oven to warm up.

    1.Separate biscuits into 2 layers.

2.Place 1 meatball and one piece of cheese into each biscuit, wrap dough around it and seal edges.

3.Place into a 9-inch round cake pan. a package of 5 fits perfectly in the 9-inch pan. Place your biscuits in the Dutch oven

4.Sprinkle with parm cheese, garlic pwd. and italian seasoning.

5.Place on coals and add coals to lid to approximate 350 degrees. I use 12 briquettes under the Dutch oven and 16 over.

6.Bake for 15-20 minutes or until golden brown.

Serve warm with warm sauce and spaghetti

    Serves 5 people@ 2 biscuits each

This is very similar to something I make called meatball monkey bread. I might have to try your recipe sometime.

We did this in the do tonight at the campsite and they turned out great. We did not have a round rack so we bunched up some foil and that worked well. They were very tasty. Will put a picture up when we get back home. Yum. [CP]

Here is a picture of how ours turned out. We might add Ranch as a dipping option next time too.
