December 2010 Recipe of the Month Submitted by: PattieAM Title: Quick and Tasty Fried Fish Fillets Serving Size: 4 people Ingredients: 1 beaten egg 2 tbsp. yellow mustard 1-1/2 cups instant potato flakes 4 fish fillets Directions: [list type=decimal][*]Combine egg and mustard - mixing well. [*]Dip fillets in egg/mustard mixture then in potato flakes, dip again in egg/mustard mixture and again in potato flakes. The mustard gives it a bit more flavor, and the potato flakes are a much lighter coating than bread crumbs or saltines, etc. [*]Fry 5-8 minutes (350 degrees if using a fryer) until golden brown and fish flakes with a fork [*]Drain for a minute or two on paper towels before serving.
