    February 2010 Recipe of the Month

    Title: Spicy Chicken Skewers (Campfire)
    Member: [CK] Anonymous

    Serving Size: 6-8 people

    Ingredients:

    2ea chicken breasts, cut into 3/4 inch strips
    salt and pepper
    jalapeƱo pepper, chopped
    1/2 c barbecue sauce
    4-5 cloves garlic, chopped
    juice of one lime

    Directions:
    • Sprinkle chicken with salt & pepper, then combine all ingredients in a zip lock baggie.
    • Place in cooler to marinate for at least 30 minutes.
    • Take wooden skewers & carefully place in zip lock baggie filled with water, soak for 30 minutes. .
    • Remove chicken & thread onto skewers, barbecue until done.

    Prep Time: 1 hour (10min prep, 30min marinate, 20min cook time)
    Cook Time: 20 minutes
    Note: I make my recipe in the morning, and leave to marinade all day. When you get back for the night, you are ready to barbecue. I serve it with roasted red potatoes.

    Sound tasty and easy enough to make. Could be the first dinner camping this year.

    Sounds great. It will be a must this year. We are able to start booking camp sites on Monday April 5 so I can hardly wait to try out the new to us camper. Happy Camping everyone

    This recipe was great! i shook it up a little the 2nd time and used pineapple and 1/2 cup of honey instead of japs. worked out well.. thanks for sharing.
