If you want a super easy pancake mix with minimal ingredients that can be made with water only try Kodiak Cakes. We've tried all the varieties and actually tried one last weekend that was chia and quinoa that is not actually on their website yet! I love this company as their mixes are really simple and make a great product without a laundry list of ingredients you cant pronounce. The power cakes are a great pick me up that's not empty carbs for a day of hiking

I really like buckwheat pancakes. We ate them a lot as kids, as this was something my dad grew up on. Seems harder to find a buckwheat mix these days. A restaurant near us used to serve them, but don't anymore.

We love them too. They can be a bit dry but we find chopping apples or bananas or pears and adding them to the mix just before cooking makes them even better.

I usually use Krusteaz. It comes in a large re sealable bag that lasts me all season. I'll try the Kodiac Cakes when I finish this bag.
