March 2011 Recipe of the Month Title: Starry Night Chili Source: Coleman Camping Cookbook Serving Size: 4 people Ingredients: 3 can 15 oz kidney beans 3 lb ground beef 10 cloves garlic 3 tbsp chili powder 1½ cup beer 1 can 14.5 oz stewed tomatoes salt and pepper 3 can 15 oz pork n' beans 3 onions Directions: [list type=decimal] [*]Build a campfire using briquettes and set up tripod for a Dutch oven. [*]Place ground beef in Dutch oven and hang Dutch oven over heat. Cook ground beef for about 5 minutes, until evenly browned. Add chopped onions and minced garlic and sauté for an additional 5 to 10 minutes. [*]Add pork n beans, drained kidney beans, stewed tomatoes in juice, chili powder and beer. Reduce heat to low or move pot to outer edge of grate. Cover pot and let simmer for 60 minutes, stirring occasionally. Season with salt and pepper to taste.
