Title: Quick and Tasty Fried Fish Fillets

Serving Size: 4 people

  • 1 beaten egg
  • 2 tbsp. yellow mustard
  • 1-1/2 cups instant potato flakes
  • 4 fish fillets

[list type=decimal][*]Combine egg and mustard - mixing well.

[*]Dip fillets in egg/mustard mixture then in potato flakes, dip again in egg/mustard mixture and again in potato flakes.
The mustard gives it a bit more flavor, and the potato flakes are a much lighter coating than bread crumbs or saltines, etc.

[*]Fry 5-8 minutes (350 degrees if using a fryer) until golden brown and fish flakes with a fork

[*]Drain for a minute or two on paper towels before serving.
