Easter dinner

    What is everyone cooking today? We are having prime rib baked potatoes and baby peas with lemon pie for dessert.

    Not cooking today, going to the mom-in-law's house.

    Friday we had a small get together. We had:

    Ham
    Hash Brown Casserole
    Green Bean Casserole
    Veggie tray, baby carrots, broccoli, cucumber,etc.
    deviled eggs
    dinner rolls
    Blueberry and Apple pie

    all my kids are home from various universities for the weekend when I asked the kids what they wanted for meals the girl said homecooked, one boy said MEAT and the other boy was roast turkey with lots of stuffing, so I did roast beef and ham on fri and tonight will be the roast turkey, mashed potatoes and celery root, sweet potatoes, beans and squash. That should cover all the basis and make them happy they came home

    We had a breakfast casserole for brunch with the family:

    6 slices of bread, arranged in a 13 x 9 pan
    Top with 2 lbs browned pork sausage
    Then add 8 eggs and 2 cups of milk, stirred together
    Season to taste
    Top that with 2 cups shredded cheese

    Refrigerate 8 hours (or longer)
    Bake at 350 for 45 minutes

    Lots of variatons (adding hashbrowns, onioins, green peppers, etc). Great recipe for camping!

    For dinner later today: pork roast, baby carrots, potato salad and strawberry shortcake for dessert.

    Easter Brunch at the campground for us.
    Woke up early and started smoking/warm up the spiral ham on the grill. Wife had packed some fresh cut pineapple steaks to cook with the ham. mmmm. mm.

    That looks really good Nuthouse! Our dinner consisted of:

    Oven baked ham
    Garlic and cream smashed potatoes
    Broccoli
    Rosemary/Parmesan bread
    Deviled eggs
    Fresh strawberries prepared in a red wine/honey sauce served over warm shortcakes with whipped cream.

    But the best part was both sons back home for the afternoon and even the grand dog.

    These all sound gooood!

    With non-meat eaters in the family we had:

    Cedar planked salmon roasted in the oven
    Roasted asparagus w/ tarragon & mint
    Steamed green beans
    Potato Salad
    Deviled eggs

    DDIL brought cheese cake
    BIL brought wine
    Family time was great!
