Today is National Moldy Cheese Day, if anybody is Interested now What can I make?

I really like black and bleu burgers. Also roasted portabellos with bleu cheese are very nice. Not to disrespect any of the other moldy cheeses out there, I just really like almost anything with bleu cheese.
