New Favorite DO side dish Corn Pudding

Easy peasy, this one. And lots of potential for additions and personalizing .

DO Corn Pudding

1 can cream style corn
1 can kernel style corn (don't drain it)
1/2 cup corn bread mix (I used part of a box of Jiffy)
2 eggs
2 cups shredded cheddar cheese
salt and pepper to taste

Mix all ingredients. Place in baking dish inside DO. Bake 40 minutes.

I, of course, am incapable of following a recipe without tinkering. So I added minced garlic, and diced chile peppers. And I just sprayed the oven itself and skipped the baking dish. Turned out great.

Next time I'm thinking of adding bacon instead of chiles. Possibly broccoli.

That is a very similar recipe to one I make called cornbread souffle. It is very yummy.

I have such a hard time "baking" in the DO. I tried to bake the canned cinnamon rolls twice and they the bottoms were burned. I put them in a cake pan in the DO. Any tips?

Try Use the parchment liners.
But the big thing is to move some of your coals to the top to cook/ from the top down.

I'm with you, cornbread soufflé is the best! That is a regular when we are camping & great with Thanksgiving Dinner.
