Simple, Quick, and Yummu Camp Dinner

    We are in the middle of remodeling our kitchen, so DW asked what we could make for dinner without making a mess.
    I said, "let me handle this."
    I threw together a simple camp dinner just using classic camping ingredients and one 12" dutch oven.
    Fire up enough coals for a medium heat.


    Ingredients:

    1 lb ground burger
    1 bag (2 lb) frozen home fries
    1 onion, diced
    1 red bell pepper, diced
    6 cloves garlic, diced
    shredded cheddar cheese
    olive oil
    salt pepper
    hot sauce

    Directions:
    Crumble and brown the meat in the DO, and then drain and remove the meat. I set it aside on a plate.
    Heat a few tablespoon of oil to a medium heat in the bottom of the DO and add onion and pepper.
    Cook for about 5 minutes or so.
    Add the garlic and then stir in frozen potatoes.
    Put the lid on and continue to cook until the potatoes are done. (About 20 minutes or so)
    Remember to stir every 5 minutes or so, to keep the mixture browning evenly.
    Add meat, mix well, and heat for another 5 minutes or so.
    Season to taste.
    Top with shredded cheese and serve.
