Yeah, only 5 gallons of black would be tough.

We value mobility and quick/easy setup more than we value interior size and appliances. Our PuP suits us well at this stage in our family's life, but it's probably the biggest camping rig we'll ever have. If we go to a hard-sided rig, it'll probably be after the kids have left home. We might go for a teardrop trailer, something like this:

Another possibility is to go with a van camper. It would be nice to be able to fit in a single parking space at a grocery store. A Sportsmobile sounds like a lot of fun.

@Orchid - we see that type from time to time. Years ago, one obviously had high-end (and beautiful) wood kitchen cupboards. Most of the time, they look top-heavy, such as the one we saw in town last weekend. Some have good steps to get in, a few have had rickety-looking ladders or step stools, which always amuses me. For that huge an investment, you'd think they'd have a nicer way to climb up into the thing.

Oh, yes, mine would definitely have proper steps, maybe even a lift. [LOL] My body isn't so young anymore.
